A Truly Nourishing Thanksgiving Dish

Clauliflower Recipe
One of my favorite healthy comfort foods is “Faux Mashed Potatoes.” If you’ve never tried this dish, trust me….it satisfies the desire for warm, grounding, creamy mashed potatoes while packing a strong nutritional punch and not spiking your blood sugar.


I love this dish any time of the year, but especially during the holidays. Whenever I serve it, even picky kids ask for seconds!

Serves 4 as a side dish

1 head cauliflower, cut up into pieces
½ cup Plain Greek Yogurt
1 tablespoon Butter Buds
2 garlic cloves (optional)
¼ cup shredded cheddar cheese or goat cheese (optional)
salt and pepper

Steam the cauliflower until tender.

Place the steamed cauliflower in the food processor.

Pulse slowly adding only a little of the yogurt at a time.

(Make sure it doesn’t get too runny…you may end up using a little less or a little more)

Add the garlic or cheese (optional)

Salt and pepper to taste.
